Westside Biscuit, coming very soon
I’m thrilled to share that Chef Jordan Balduf (Side Biscuit) is taking over the hear.say food truck this week and launching a new concept called Westside Biscuit. We expect to soft launch on Friday, May 1 with a limited menu that will scale up to include wings, sandos, tots, dogs, and logs. Westside Biscuit will eventually mirror hear.say hours, but be closed on Sundays.
This week’s schedule:
Tuesday, April 28 - Thursday, April 30: Food truck closed (BYOF), normal brewery hours
Friday, May 1: 4-11 pm
Saturday, May 2: 4-11 pm
Sunday, May 3: Side Biscuit closed, brewery open 12-9 pm (BYOF)
Prior to even opening, Jordan was a dream food partner and I hoped that we could someday get him to lead our program. I was a major fan of his going back to his days at HOMES Brewery where he helped execute delightful beer pairing dinners. Jordan is renowned for his bold flavors, fresh ingredients, and creative collabs.
We should also have a head brewer announcement soon! We expect that person to work collaboratively with Jordan’s team to help us create fantastic culinary experiences for you to enjoy in our indoor and outdoor spaces. (Think beer cheese, fun sauces, and more.)
We’re really excited about future growth in our part of town. We view this as only phase 2 in an ongoing journey towards cementing our place as a favorite social and culinary hub on the westside.
For members, we’ll be coming up with a new Tuesday special that includes a food and drink pairing of similar value to the smash burger offer. Stay tuned for more there.

Whether you were with us for a short period of time or a long one, you helped us craft community through joy and laughter.
